it was a beautiful and bright and clear day today!
check out this beauty:
yummeh! meat pie made with our leftover stew of stewing meat, kidney, carrots, potatoes, squash, pumpkin and onion.
we've been eating that baby, hot and cold (it's just as delicious cold!), for the past 2 days.
jam took the truck over to fourchu so that our friend j could pick it up and bring it to his uncle's garage. it needs some welding done on the frame, and as that isn't covered under warranty, j will take it to his uncle's garage. j does incredibly excellent work and this needs to be done for the safety of the truck. vehicles take a real beating here due to the high salt content in the air, the ocean being all around us, and then roads being salted in the winter.
here's what looks like a very bland pasta:
but we love it and it's our go-to meal when we just want something quick! cook your pasta, strain it, dump a big galump of EVOO and a big blog of butter into the pot, add the pasta back in, dump in 6 cloves of crushed garlic, stir it all around, dump it on your plate and add salt, pepper and red pepper flakes. it's deelish!
want more deelish? how about some pumpkin and squash puree on the left and yellow and green zucchini puree on the right:
we'll can all of that tomorrow and have lovely purees over the winter. when i puree our squash or pumpkin or zucchini, i add one jar of home-made veg/bone broth. it is a very thick puree and although the blue ball book does not recommend canning puree, we have never had a problem with any of our purees over the years. i can the puree in pint jars and then, when cooking the puree, i add coconut milk and homemade curry powder to the pumpkin/squash puree and homemade broth to the zucchini with a variety of spices (cumin, cayenne, turmeric, etc.).
one great thing about living on an island - incredibly fresh and beautiful fish! check out this tuna that jambaloney got the other day from the fish guy. the fish guy has a truck and no regular hours or days. yer either there when he is - or yer not. that's how most things run on this island. but check out this atlantic tuna:
jam ate some of his raw as he loves raw meat and fish. then he threw his on the barbie for just a few seconds so that it stayed pink in the middle. i served it with sticky rice, rice wine vinegar, cucumber, carrot, avocado, toasted sesame seeds and kimchi. the sauce on the rice is soya, rice wine vinegar, sesame oil, fresh-crushed garlic and ginger.
here's my tuna just the way i like it!
fried in a pan in sesame oil and at the last minute some of the soya mixture dumped on.
tomorrow is supposed to be another bright, blue sunny day and that is the forecast until monday - woohoo! bring it on! then on monday it is supposed to rain. with that many days of sunny and melting and then rain....most of the snow will have melted...which is usual for this time of year.
as i mentioned, we are planning on canning tomorrow, doing regular chores, hanging out, walking around the property, a walk to the river - who knows what else?
