brrrr...it's been a little chilly!

brrr. the cold spell that has been hitting the east coast of north america finally caught up to us! it's chilly...but pretty!

 
 we normally get a dusting or two of snow in december...but it just usually melts as it falls. not this time. this is staying snow. but it is pretty to look at, no?

how about a delicious "everything-in-the-fridge-quinoa-salad" to keep you fit, healthy and strong during a cold spell?


that right there is a romaine lettuce chiffonade, broccoli hearts, cauliflower, tomatoe, cucumber, avocado, parsley and quinoa salad with a dressing of olive oil, apple cider vinegar with the mother, unpasteurized local honey, garlic and ginger and it tastes divine - especially after it has sat for a few hours. some mandarine and our own cranberries on the side - deelish!

jambaloney got a pile of butternut squash on sale and so we bought up a bunch as they keep well in our basement/coldroom. you cut them in half and scoop out the seeds (save them for roasting - what a great snack! pics to come!). you make several score marks in them, brush them with a ton of butter, add salt and pepper and roast those babies for an hour. you can eat them at this point - we ate a half of one just standing at the stove while they were cooling. they'll soon be turned into soup.

 

once they have cooled you scoop out all of the flesh, put it in the blender/food processor, add coconut milk (sooo good for you!), turmeric, cayenne, cumin, nutmeg, cloves, cinnamon, garlic, honey, ginger, s&p - and you have a delicious soup to can or freeze and it will get you through the winter just dandy.

here's some yummy aloo gobi!

this is another delicious dish for cold winter eves. there are chicken cubes, potatoes, cauliflower, peas, onions and green pepper mixed with coconut milk, homemade broth, cumin, cayenne, turmeric, garam masala, ground coriander, unpasteurized honey, garlic, ginger and apple cider vinegar - all spices to help build up your body's own natural immunities to get through the winter!

we certainly haven't had it as bad as some of you had...we are just experiencing a little more than normal chilliness - nothing that some good food, a good sunset and a cup of mint/chamomile tea can't fix!

    1. hey buddy - i tried to grow butternut squash last year and it was a dismal fail. but i will keep trying! the great thing about winter squashes and pumpking (as you know!) is that they will keep for months in our cold basement, you can freeze or can them when they start to go off, and they are good hardy winter food! i saw your post...thanks buddy! i appreciate all the men preppers/survivalists too and i love the fact that you are an apiarist extraordinnaire!

  2. A heat wave today for us a high of 19. Wind chills yesterday where negative 25 to 35 below zero. We have gone from temps in Florida in the summer near 135 degrees with heat index, to subzero, put on all your clothes to stay warm in MN. Bahahaha.

    I love it here........sorry lips frozen

    It's cold here. Never got out of the low thirties and now the sun is going down, so it's getting colder. Your place looks pretty chilly with that snow laying all over the ground. I imagine you and J will be snug in your house though.

    1. Harry, my friend - we are having a bit of a cold snap, very unusual for this time of year but we should be back to normal temps by monday and all of the snow will have melted by then. i hope that you are staying snug as a bug in your beautiful cabin!

    I'm sitting hear reading your post, and just had my english muffin and a up of tea and I'm not satisfield. Your quinoa, and aloo goobi looks and probably tastes better than my dear old englush muffin.

Sweet Sandy - i have been pumping us full of good food over this cold spell! we are actually a little run-down and haven't been our usual selves the past week - i think we caught the tail-end of our friends cold. it's not enough that we are sick but we just aren't feeling 100%! so i have been pumping us full of the good food and making lots of garlic and ginger tea.

      i'm sorry about your english muffin - sure do wish you were here so that i could make you something satisfying - like a big honking meat pie - bahahahah! love and hugs always to you from both of us! xoxoxo

  7. I've been trying to clean out the freezer to make room for a deer here in a few weeks so this year I tried canning squash for the first time. It works great and allowed me to free up the needed space. My new favorite recipe for squash is to add a couple eggs, chopped red and green peppers, chopped onions, lots of feta cheese, a cup of yogurt, sprinkle with some seed sand bake for an hour or so. I just love that as a side dish.

    1. Ed - will the deer already be processed or will you be processing it? i've canned squash in the past but it was just easier to freeze this batch. your recipe sounds deelishous - i can't wait to try it! it sounds deelishous and filling at the same time - yummeh!

    2. Because I have two young kids, I prefer to spend my extra time with them these days and let someone else hunt and kill the deer for me. The deer is always a Christmas present from my parents so they pay to have it processed the way I desire. I normally have the butcher save the loins and grind the rest up into unseasoned burger which I use like hamburger only much leaner. Back in the day before I was married though I did go deer hunting and would clean my own deer.

I should explain that because deer have such a huge population here, my parents qualify for deprivation deer tags and mandate that anyone hunting on their property fill out one of those before filling out their own tag. The last couple years that has meant my parents have had around 150 deer per year killed on top of the hunters tags so the total would be 300+. Most hunters keep both deer they kill but a few just like the hunt and give it away to shelters. My parents have these hunters shoot a couple for my brother and I too. Works well.
